More than Rice and Beans

Working at San Juan del Sur Day School

San Juan del Sur Day School is a private day school, located in San Juan del Sur, a coastal town on the Pacific Ocean in southwest Nicaragua. In Nicaragua it is usual that people have three meals of rice and beans per day. I have learned that you can have ‚Gallo Pinto‘ (a mixture of fried rice with onion and sweet pepper, red beans boiled with garlic) for breakfast and dinner, but not for lunch. That’s a no-go. For lunch you can only have rice and beans. In school the kids got rice and beans for lunch every single day. In order to improve those meals I did research on healthy nutrition and created a cooking book with healthy recipes. Beyond this, I helped the teacher with the older kids during the lessons, I read English books and helped with English grammar and writing. I played games, sang songs, went swimming, did yoga and went surfing with the kids.

Working with children means that you have to spend much energy, but after a while they will give it back to you.
